Coffee isn’t a stimulant so much as a tiredness-blocker.  Caffeine is chemically similar to adenosine:

Caffeine molecules bind to adenosine receptors in the brain and prevent nerve cells from responding to adenosine, which normally slows us down.  Unfortunately for those who drink lots of coffee the brain develops more adenosine receptors, and it takes more coffee to stay awake.  {I recently suffered serious caffeine withdrawal when I suddenly and unexpectedly went two days with no coffee, when I usually have 36-48 ounces a day – headaches, tired, and I felt horrible!]
